Content of the project:
The main goal of the project is to enable the production of functional food products that go beyond the basic characteristics of products in a traditional industry. Products manufactured by nanotechnological processes developed during the R&D project and customized according to physiological state or age specificities guarantee appropriate intake and bioavailability of beneficial nutrients alleviating public health risk and at the same time providing healthier alternatives of usual products.
Nanotechnology developments planned during the project:
– nanocomplex development – a food product additive or dietary supplement supporting appropriate intake of vitamins, minerals and micronutrients in a highly bioavailable form
– test kit development to screen bioactive compounds – development of rapid test enables quality control related to the processing of dairy products
– novel method for lactose-elimination – re-usable, mass manufacture-scale method that reduces lactose content and increases probiotics content
